Chicken Stock

A good home made stock is in valuable in the kitchen. The stock cane be refrigerate for 4-5 days or frozen for longer storage for 2-3 months.


Chicken – 3 lbs of wings, neck and back
Carrots – 2 roughly chopped
Onions – 2 roughly chopped
Celery stick – 2 roughly chopped
Bay leaves – 3
Thyme – 1 tsp
Oil – 2 tsp
Salt – 1/2 tsp
Pepper –  1tsp fresh ground pepper
water – 10 cups


In a large pan or a stock pot add the oil and brown the chicken for few minutes.

Add the vegetables, salt, pepper and all the remaining ingredients and water.

Bring to boil then lower the heat and simmer for 2 hours.

Strain the stock. leave the stock to cool and refrigerate and remove the fat layer.

now chicken stock is ready.
