Shrimp Toast


Ingredients:

Shrimp – 1cup shelled & Deveined
Egg whites – 2
Cornstarch – 2tbsp
Cilantro – 2 tbsp finely chopped
Bread – 5
Sugar – ½ tsp
Salt to taste
Oil for frying

Method:

Pound the shrimp to a pulp with a pestle & mortar or with a food processor. Add a little salt and pepper.

Mix the egg whites, sugar, salt, cilantro leaves and 1tbsp of cornstarch. .Mix one tbsp of cornstarch with little water.

Remove the crust in the bread and cut it into 4 pieces. Apply the top of each piece with egg white, corn starch and then add the shrimp mixture.

Heat oil in a deep pan. deep fry the toast side up for about 2mins then turn and cook for another 2 mins. Drain and serve with sweet chili sauce.
