Chicken/Vegetable Kushka


Cloves – 3
Cinnamon stick – 2
Cardamon – 2
Bay leaves – 3
Star Anise – 1
Ghee/ Clarifies butter – 2tbs
Green chillies – 4-6 slit lengthwise
Garlic paste – 1tsp
Ginger paste – 1tsp
Chilly powder – 1tsp
Onion – 1 roughly chopped
Mint leaves – few
Basmati rice – 2 cups
Chicken / vegetable stock – 4 cups


Soak the rice in water for 20 minutes.

Heat a ghee in a pan. Add cloves, cinnamon, star anise, bay leaves, cardamon and green chilies.

Add onion and fry till it turns golden brown. Add ginger paste, then garlic paste one by one and cook till the raw smell goes.

Add mint and cilantro leaves. Now add chilly powder and salt. Mix well.

Add rice and saute for 5 minutes or till the rice is slightly fried.

Add the stock. Cover and cook over the medium heat for 15 minutes or rice becomes fluffy.

Serve with onion raita
