Jeera/Cumin Rice


Ingredients:

Basmati rice – 2cups (soaked in water for 30 minutes)
Cumin/Jeera seed – 3 tbs
Green chilly – 6 Slit lengthwise
Ghee/Clarified butter – 1tbs
Onion – 1 chopped lengthwise
Bay leaves – 2
Cloves – 2
Water or vegetable stock – 4 cups
Salt to taste

Method:

Heat Ghee in a pressure cooker. Add cinnamon stick, cloves, bayleaves and cook for a minute.

Add the cumin seed after a min add chopped onion and green chillies.

Cook till the onion gets a golden brown, add rice and cook for 3 minutes.

Add water or vegetable stock, close the lid, cook in medium heat for 15 minutes or for one whistle.

Switch off and let the pressure escape. Jeera rice is ready.
