Sweet Pongal

Today is Pongal, a festival of southern India. Its celebrated by the farmers after their harvest. In Tamilnadu its celebrated as Pongal and other places as Sankaranthi. Pongal is also a Sweetened rice which is ritually made on a clay pot and consumed on this day. Though I did not have the right clay pot utensil. I made my own version of it on a pressure cooker.


Raw rice – 2cups
Moon dhal / Yellow Mung bean – ¾ cup
Jaggery – 2 cups powdered or according to the sweetness
Clarified butter/ Ghee – 4 tbsp
Cashews – 2 tbsp
Raisins – 1tbsp
Coconut – ½ shredded

Soak the rice and bean in water for 1 hr. Pressure cook both with 6 cups of water.

Once the pressure leaves from the cooker add the jaggery and mix well. The heat from the rice helps the jaggery to melt and mix with the rice.

Heat ghee in a small pan roast the cashews until it gets a brown color, then add the raising and stir for a minute and add it to the rice. Add the shredded coconut. Mix well. Pongal is ready.
