Chicken Noodles


Ingredients:

Chicken – 1 cup cooked boneless, skinless and cubed
Egg noodles – 1 pack
Garlic – 2 tsp minced
Carrot – ¼ cup cubed
Peas – ¼ cup
Beans – few slit diagonally
Mushroom – ¼ cup sliced
Red onion – ¼ chopped roughly
Scallions – 1 tsp chopped (white part)
Soy sauce – 2 tsp
Chili bean sauce – 2 tsp
Rice wine vinegar – ½ tsp
Oil – 2 tbsp
Egg – 1
A pinch of salt

Method

Cook the noodles as per package instruction or boil water in a deep pan add the noodles cook for a minutes, drain the water, spread the noodles, spray some oil so that its fluffy and does not stick together.

Heat oil in a wok stir in the vegetables and garlic and cook for few minutes. set aside and add the egg and scramble it. Now add the cooked chicken, soy sauce, chili bean sauce, rice wine vinegar and some salt and mix them well.

Toss in the noodle, mix and cook for a minute. Garnish with the scallions. Serve hot.

    Again!!! A delicious recipe :).. Made this 2 days ago but with whole wheat pasta and it was still super yum. I pressure cooked chicken breast pieces in a simple veggie stock for extra flavor… what can I say!!! Again loved it!

    I’m glad you liked it Vini. I usually use a rotisserie chicken breast or pound & flatten the chicken breast, season with kosher salt, cayenne pepper and cook it on the oven or I do heat water add some garlic, salt & paprika and the pounded chicken breast for 10 minutes and slice then into bite size pieces. and we can make some yummy soup out of the left over stock 🙂
