Green beans cut diagonally into 2″ pieces – 2 Cups
Dried red chillies – 5 -6
Garlic cloves finely minced – 1 tbsp
Ginger root – 3 thin slices
Scallions – 2 cut the white part diagonally into thin pieces
Oil – 2tbsp
A pinch of sea salt
Method:
Heat water in a large pan. Once the water starts boiling, add the beans for a minute, remove, drain and set aside.
Heat 1 tbsp oil in a wok. Stir fry the beans for about 5 minutes or until the color change and they wrinkle. Remove and set aside.
Heat the remaining oil in the wok, stir fry the chillies, garlic, scallions and ginger root and stir fry for about 2 minutes.
Toss in the bean, add salt and stir fry for a minute. Switch off and serve immediately.
