Cream of Mushroom Soup


1 cup of Fresh mushroom sliced
1 tbsp of Butter
3 cups of Vegetable stock
1 cup of Milk or Half n Half
1 cup Yellow onions chopped
1 cup Leeks chopped (just the white and light green parts)
⅔ cup of all purpose flour
Sprig of fresh thyme
Salt as requires
1 tsp fresh ground pepper


Heat butter in a pan, add the onions, mushrooms, leek, sprig of fresh thyme and little salt.

Cook on low heat for 10 to 15 minutes or until the mushroom is browned. Add the flour stir for a minute.

Slowly add the Vegetable stock stirring until all is incorporated.

Add salt and freshly ground pepper. Simmer for 15 to 20 minutes.

Add the half and half and season with salt & pepper to taste. cook for a minute but do not boil. Serve hot.
