Shrimp Scampi with Lemony Linguini


Ingredients:

Shrimp – 1pound cleaned, deveined with head & tail off
Linguini – 1 pound
Butter – 2tbsp
Olive oil – 2tbsp
Garlic – 1tsp minced
Shallot – 1 finely chopped
Lemon – 1 zest and juice
Chilly flakes – 1tsp or according to taste
Parsley – 1 tsp chopped
Salt and pepper to taste

Method:

Clean the shrimp, add salt, pepper, parsley and drizzle some oil and bake for 3-4 minutes on 350º turn the shrimp and cook for another 2 minutes or Heat oil in a frying pan add the shrimp season with salt, pepper & parsley and cook for 3-5 minutes. Switch off the flame and keep aside. Meanwhile, put a large pot of water to boil on stove. when it boils add the linguini and salt. Cook for 10 minutes and drain them.

In a deep skillet add butter and the remaining olive oil and let the butter melt. Add the shallots, lemon zest, chilly flakes and cook for 5- 6 minutes, then add the lemon juice. Season with little salt.

Add the pasta and mix well. Finally add the shrimp and mix well.

Serve hot immediately.
