Spinach and Mushroom Quiche


Spinach – 2 cups
Mushroom – 1 cup sliced
Onion – 1 medium sized chopped
Oil – 1 tbsp
Egg – 3 large + 2 Egg whites
Half and half or Heavy cream – 1 cup (I used a fat free Half & half)
Monterrey cheese – 1cup shredded (I used a 4 cheese combo and reduced fat)
Pie crust
Salt to taste


Preheat the oven to 375˚
Heat oil in large skillet add Spinach, cook for a minute.

Add the chopped mushroom and onion, season with little salt and cook for another 5-8 minutes.

Mix the half & half milk and eggs together. Add the shredded cheese and mix them well.

Add the cooked spinach and mushroom mixture.

Spray some oil on a pie plate and place the pie crust and the mixture to it.
Trim off the excess edges and with make marks with a fork along the edges.

Bake the Quiche for 30 minutes or until the knife inserted in the center comes out clean. Cut into 6-8 slices.
