Stir-fried Asparagus


Spring is the season for asparagus. This highly prized vegetable arrives with the coming of spring, when its shoots break through the soil and reach their 6-8 inch harvest length. Asparagus is a nutrient-dense food which is loaded with fiber and vitamins high in Folic Acid and is a good source of potassium, fiber, vitamin B6, vitamins A and C, and thiamin. They have no Fat, no Cholesterol and is low in Sodium. Today I made some Asparagus stir fry with grilled Salmon and mixed greens.

Ingredients:
Asparagus – 1 bunch
Red onion – 1 thinly sliced
Garlic – 2 tsp finely minced
Mustard – 1 tsp
Honey – 1 tsp
Chilly flakes/ Chilly powder – 1tsp (optional)
Oil- 1 tbsp
Salt to taste

Method:

Break the asparagus into two inch length. Wash them and keep aside.
Heat oil in a wok, swirl to coat the sides. Stir fry the onion for few minutes.
Stir in the minced garlic and cook for a minute.
Now add the asparagus and stir fry for 3-4 minutes or until tender. Be careful not to overcook the vegetable. Remove and keep aside.

In the same pan add the mustard, honey and chilly flakes, bring to boil, reduce the heat and let it simmer for two minutes.
Now add the cooked Asparagus to the wok and toss it through the mixture. Serve hot.

We can add some croutons and serve on a toasted ciabatta as a starter.
