Chewy Chocolate Chip Cookie


Chocolate chip cookies: The first thing comes to my mind are those days when I had my first cookie from Goodday biscuits and later the crunchy square shaped Hide & Seek which had those little chocolate chips in the middle and finally I tasted a soft, chewy cookie at a coffee day and my cookie craving started from then. After loads of trials & error, I found my perfect cookie recipe. I just love baking these cookies. They are just gooey, chewy and all chocolatey and when the fresh baked aroma fills the air, I don’t think anyone could resist a bite of it. I’m definitely in love with chewy gooey chocolate chip cookie. Enough of my stories and here comes the recipe…

Ingredients:
All purpose flour – 2 cups
Butter – 1 cup
Baking soda – ½ tsp
Vanilla extract – 1 tbsp
Light brown sugar – 1½ cup
Granulated sugar – ½ cup
Eggs – 2
Salt – ½ tsp
Semisweet chocolate chips – 2 cups

If you are vegetarian you can add two tablespoon of cornflour or regular flour mixed with two tablespoon of milk instead of eggs.

Method
Preheat oven to 375˚F. In a bowl sieve flour, baking soda and salt and keep aside.

With a help of a electric mixer beat the butter, brown sugar & granulated sugar until they become fluffy. Now add the eggs and vanilla and mix well.

Add the flour and mix until the dough is combined. Stir in the chocolate chips.

With a help of a ice cream scoop, scoop tablespoon size dough on a baking sheets lined with parchment paper about 2″ apart.

Bake the cookies for 8-10 minutes or until the cookies are lightly browned around the edges. Remove from the oven, transfer to a wire rack and let it cool.

Enjoy the Chewy Chocolate Chip Cookie with some milk.

Note: For a crunchy cookie, bake the cookies for 12-14 minutes.
